The company was founded in 2019 (as "Robinson Soft Brittle") by Pamela Robinson with a single product: Soft Peanut Brittle. Soft Peanut Brittle is a regional delicacy in the Inland Northwest (along with pockets of the deep South and Southeast Asia). Over the following several years she and husband Todd brought out more soft brittle flavors, a complete line of traditional English Toffee creations infused with liqueurs recreating popular cocktails, and began importing chocolate from Belgium in 2022. The business was renamed "Robinson Confections" in 2024 to more accurately reflect a broader product lineup, now offers several flavors of soft brittle, many types of couverture-grade layered Belgian chocolates with inclusions, their original creation line of nearly a dozen liqueur-based English Toffees, and a line of top-tier couverture grade dark chocolates ("couverture" is the top grade of chocolate available in the world) which are also keto and low-carb. They also offer several dairy-free, low-carb/keto, and vegan-friendly options, Dubai Chocolate Bars, and their own line of energy bars based around their soft peanut brittle candy.
